Better Butter Blend with coconut oil

Butter, mmmmm, the rich sweet creaminess, does it get any better?  Why, yes, yes it does, this is a Better Butter Blend, full of rich creaminess, the awesomely brain boosting power of coconut oil, and sweet maple flavor

My kids call this my “Brain butter” but that title is too gross sounding for bloggerland, though that is essentially what it is, it is butter for your brain!!  With so much being written and blogged about coconut oil, and our quest to help Little Man have the healthiest brain connectivity he can, we turn to coconut oil a lot.  The health benefits are great, but to the kids, meh, flavor not so great.

I came up with this recipe after reading a friends blog, where her son “accidentally” poured out way more syrup than needed for his breakfast(and nearly every other persons in the state:-).  A light bulb went on after reading this, I remember my mom making maple butter when I was a kid, because it go the maple and the butter onto my pancakes or toast with the minimum of fuss and mess, lightbulb moment!!

combine my efforts to get more coconut oil into the wee ones, and my desire to ration this pricey commodity, and Brain butter, or Better Butter was born!!  Enjoy the flavor, and the savings!!!

Better Butter Blend

Serves 20-30
Prep time 5 minutes
Allergy Egg, Soy, Tree Nuts, Wheat
Dietary Gluten Free
Meal type Breakfast, Condiment
Misc Child Friendly, Pre-preparable, Serve Cold

Ingredients

  • 1/4 cup butter, softened
  • 1/4 cup coconut oil, softened
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon natural sea salt

Directions

Step 1
Using a hand mixer and a tall bowl/cup carefully blend your softened butter and coconut oil, until fully mixed and fluffy.
Step 2
Into the butter and coconut oil sprinkle your sea salt, and pour in your maple syrup.
Step 3
Blend butter again, until syrup and salt are fully incorporated. Taste test, you may want to add a small touch of maple extract to your blend, to increases the maple flavor slightly.

 

this is perfect for using on my Cranberry Orange English Muffins, or my other english muffin recipes.

This stores well on the counter in the cooler months, the coconut oil will remain firm, but if it melts and separates just rewhip it back to a fluffy consistency.

For Ketogenic patients, you can use the Walden Farms syrup in this recipe, or just use the maple flavoring, but check the flavor as you go:-)
