Coconut Chocolate Chip “Sandies” GF/DF/Nut Free/Vegan

So these cookies were a super easy and fun cookie i recently brought to a business meeting with a few mom friends(more on the business later:-).  These Coconut Chocolate Chip “Sandies” are GF/DF/Nut Free/Vegan, and pure amazing-ness, as evidenced by the fact that in order to have a cookie for the blog pic, I had to make another batch!!  LOL, the last crumbs were consumed before I had even gotten home, they were just that good!!:-)

With my FB page exploding about these cookies, and the need to have the recipe, I decided I hd better get a move on and get it posted.  This was one of my typical recipes though, a bit of this, a bit of that, no eggs(so they are friend safe;-), and def no gluten or dairy(’cause I hate making things I can’t even eat!!).

Thankfully I managed to remember my recipe pretty well, and recreated these a few days after the first batch disappeared, for a sweet 1st bday party.  The second batch did not last much longer than the first, lol, they really are just that good:-)

Coconut Chocolate Chip “Sandies” GF/DF/Nut Free

Ingredients

  • 1 1/2 cup oatmeal(not quick cook)
  • 3/4 cups oat flour
  • 2 tablespoons potato starch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1/2 cup non-dairy butter or coconut oil (slightly softened)
  • 1/3 cup sugar(I use coconut sugar)
  • 1 teaspoon vanilla extract
  • 1/2 cup vegan chocolate chips
  • 1/2 cup shredded coconut
  • 1 tablespoon psyllium husk
  • 4 tablespoons water

Directions

Step 1
Preheat oven to 350* .
The first step is to make you egg replacer, in a small bowl blend your psyllium husks and water together, stir and let it sit.
Step 2
in a mixer blend the non-dairy butter/coconut oil and sugar until fluffy. Add in your vanilla and salt.
Step 3
In medium mixing bowl stir together your oats, oat flour, baking powder and potato starch, blend well.
Step 4
into the sugar and butter mix add your egg replacement and mix on medium for a minute until incorporated.
Step 5
One the egg replacer is fully incorporated add in your oat flour mixture, and stir on low until blended. at this point you may need to add water, 1 Tbsp at a time, until it is soft and sticky, not crumbly batter.
Step 6
once you have a good batter consistency gently mix in your vegan chocolate chips and coconut, stir just until blended.
Step 7
Scoop onto Silpat or parchment paper and bake. 8-10 minutes is about perfect for my oven, not too crispy, but a nice light toasty brown, mmmm

 

These are best slightly cooled, so they hold together well, but I maaaay have burnt my fingers a few times, just to try them out;-)
