Marie Antoinette may have made the phrase famous, but you will reach super hero status in your household with this super simple coconut flour cake recipe. Let them eat cake, only you will know that it is a crazy healthy, it is GF, with no added sugars, and it will stay with them until lunch time.
Chocolate Coconut Mug Cake
1/4 c coconut flour
1 1/2 large ripe bananas, mashed
1 1/2 tsp baking powder
4 tsp cocoa powder
1 1/2 tsp pure maple flavoring
1/2 tsp cinnamon
2 1/2 Tbsp peanut butter(we prefer Pb & co)(for nut free use soy nut butter or sunflower butter, your choice)
2 eggs, beaten
4 1/2 Tbsp cream cheese
Mash your banana well, blend in your maple flavoring, peanut butter, and eggs.
In a medium bowl blend your coconut flour, baking powder, cocoa powder, and cinnamon.
Blend the wet ingredients into the dry, mix well.
Divide the cake batter into 3 coffee mugs, equally.
Onto the batter dollop 1/3 of the cream cheese, push it down into the batter slightly.
Microwave the mugs, individually for 1 minute, and turn it, to microwave for 1 more minute, or until the cake is set in the middle(no longer shiny, but fluffy and matte)
The cakes will pull away from the mug sides when they are fully cooked, and will be easy to remove with a rubber spatula.
