So I am currently helping admin a Fit For summer 90 Day Challenge group with my It Works teammates. This is a group that is encouraging, helping and guiding all of our clients who have purchased healthy weight maintenance or weight loss products. I am thrilled to be working with this lovely group of ladies, and so I want to be able to contribute what I do best, to assist the groups member, so I have recipes and tips to eat healthy and keep it economical!!
For this weekends shopping trip for all of the members of the Fit For Summer 90 Day Challenge group, I suggest you all go and purchase a whole roasting chicken. Get the largest, best quality chicken, or 2, that you can find!! If you are like me and have a larger family, buy 2, it will save you in the long run!! I want you to go and get this for this reason:

yup, thats right, no matter how good your intentions, you can easily fall back into your old eating ways, if you fail to plan. Planning is super simple, and benefits you so much in the long run, even if it takes a bit of time at first to do it.
So, go, buy the roaster, and get ready to make some awesome recipes with it!! I am going to include the link here to my crockpot chicken recipe, it is amazing, and so simple, it will be dinner for at least one night, just as it is. Another night you can use the chicken, shredded, to make tacos, using lettuce leaves as the “taco shell”. This chicken will also be perfect for chicken for lunches, just shred, add a tiny bit of hummus and some dried cranberries, and you have an awesome chicken salad for a roll up or on a salad. You will still have chicken left over at this point, for you typical size family;-), and can use all of the great broth left from cooking the chicken in the crockpot to make a super simple salsa chicken soup, recipe below.
So do you see how this planning will make your new healthy eating habits on track. This keeps you from needing to make something quick on a day you are running late from work, and stopping on the way home from work and getting pizzas or burgers?!

Salsa Chicken Soup
- 1 Large roaster chicken, leftovers (fully cooked, juice reserved)
- 2 Medium onions (chopped)
- 4 cloves garlic (diced)
- 2 cans zesty green chili tomatoes, 12oz size
- 4 cups chicken broth (reserve from cooking chicken in crockpot, or use high quality canned broth)
- 1 cup chopped green peppers
- 1/2 cup chopped red or yellow peppers
- 1 can black beans (drain and rinse)
- 1 can chickpeas (drain and rinse)
- 1 cup corn
- 1 teaspoon chili powder(to taste)
- 2 teaspoons cumin
|Remove all chicken from the carcass, and roughly chop, put into crockpot. Place chicken broth and cans of zesty tomato into a 4qt or larger crockpot.|
|Add in onions, garlic, corn, beans, chickpeas, and spices.|
|cook for 6 hours on low. An hour before ready to serve add in the green and red peppers, allow to cook on low for 1 hour.|
|Add salt and pepper to taste, and adjust spice level to your personal preference as well.|
|serve this with brown rice, or quinoa, for a hearty, economical and nutritious dinner.|
