gluten free coconut macaroon cupcake recipe

Fancy Miss has been on a baking kick lately, and this gluten free coconut macaroon cupcake recipe is her newest delicious creation.  Not sure if she is just taking after her mommy in kitchen slap-dash wizardry or if it is the super cute ruffled apron that Hubby recently got her, but she is inspired, and I am busy churning out GF recipe adjustments for the confections she is whipping up, either way, they are tasty and fun, and she looks super adorable in the apron, so win-win;-)

These were born from a book series Fancy likes, the Cupcake Diaries, and in the series they always have attached some cupcake recipes, the inspiration one was a plain coconut cupcake, but, hey, this is me and mine, so that will never do!!  Fancy knows that gluten free baking can be dry and tricky, so the idea to make it a macaroon cupcake, with whipped egg whites is simply inspired, and sooo yummy!!!  We hope you enjoy this delightful treat, and stay tuned, Fancy Miss is likely to take over the blog on occasion from now on:-)

The taste of a coconut macaroon in a moist and fluffy cupcake. Made with Better Batter Pancake mix and gluten free flour mix, easy and delicious!

Ingredients

  • 3/4 cups Gf flour blend(my recipe at the bottom)
  • 1/3 cup Better batter Gf pancake mix
  • 1 1/2 teaspoon baking powder
  • 6 tablespoons butter softened
  • 1 teaspoon almond extract
  • 1/2 cup sucanat, divided
  • 2 eggs, separated
  • 1/2 cup coconut milk
  • 1/2 cup shredded unsweetened coconut, +3 Tbsp

Directions

Step 1
Preheat oven to 350*
Step 2
In medium bowl stir together flour, baking powder, and Better Batter Pancake mix.
Step 3
In stand mixer whip together your softened butter and 1/4 cup sucanat, until fluffy.
Step 4
Into the fluffy butter add almond extract, egg yolks and coconut milk, blend fully.
Step 5
Slowly incorporate your flour mixture into stand mixer, fully incorporating the dry ingredients into the wet, blend 2 minutes on medium speed.
Step 6
In a separate bowl whip your egg whites with a hand mixer, until soft and fluffy peaks form, slowly incorporate your 1/4 cup sucanat into the egg whites. Whip until stiff peaks form, egg whites will be glossy but not dry.
Step 7
Prepare muffin papers in a muffin pan.
To the stand mixer add your 1/2 cup coconut shreds, remove from mixer once incorporated.
Step 8
By hand, carefully fold in your egg whites until well blended.
Step 9
Scoop batter into muffin papers, fill 2/3 of the way. Top with a sprinkle of the leftover coconut shreds, and a dusting of sucanat.
Step 10
Bake 20-25 minutes, until toothpick inserted comes out clean.

this recipe uses my gluten free flour blend as well as the Better Batter pancake mix, I have not tried it with other flour options, but feel free to leave a comment if you do find another combination that works:-)
