In looking at all of the recipes I make on a regular basis, and which I should post for others to see and use, I came back many times to my grain free baby muffins, DF, GF. These baby cakes have been the saving grace for me more times than I can count in the months since the little Cupcake began eating solids. That being the case, I thought I would share the yummy magic, for other mommas who have kids with food sensitivity and need something quick and easy, and packed with nutrition!!
The Cupcake Princess loves these little baby cake bites(grain free baby muffins just doesn’t sound as fun, does it;-) in spite of the accuracy!) As do I, but for different reasons! She loves them because they are tender, moist, yummy and full of flavor, I love them because they are quick, flexible, easy to take on the go, and super full of all her nutritional needs, and not too messy to eat, lol!! She gets excited at every meal when she eats them, and I am happy to give them to her, letting her practice her finger food skills and not worrying about her choking(though I watch her carefully anyway, of course!)
These grain free baby muffins were made out of desperation, as the Cupcake Princess doesn’t tolerate dairy at all, and has a hard time with grains too, even gluten free ones. I searched high and low for a recipe that fit her dietary needs, and gave good protein, plus some veggies or fruit too, ’cause let’s be honest, I can give her grain free crackers at any time, but she needs real food to grow healthy!! She doesn’t eat tons at one time either, so they had to be nutritionally dense, and since we are on the go a lot with the bigger sibs, having a portable meal that did not require heating would be a huge bonus! After a few failed attempts these beauties were born, grain free baby muffins, DF, GF (AKA Baby Cakes;-). These are such great little baby food bites I made them in Disney while we were on vacation, for 2 weeks, with limited resources and lots of on-the-go-time, and they worked perfectly, and some meals they were all she wanted to eat!!

- 1 egg (whisked)
- 1/2 cup peanut butter(any nut butter will work)
- 1 cup pureed fruit or veggie(see notes at end of recipe)
- 1 teaspoon baking soda
- 4 1/2 tablespoons flax meal
|In microwave safe dish ,whisk egg well.|
|Into the whisked egg add the peanut(or nut) butter and pureed veggie or fruit, mix well.|
|Add the flax meal and the baking soda to the egg and fruit/nut butter mix, stir. I do all of this in the microwave safe dish i will be cooking the grain free baby muffins in. Typically I use a 4x8 rectangular plastic dish with a snap on cover(think restaurant takeout dish:)|
|Evenly spread the grain free baby muffin mixture in the dish, and microwave for 1 1/2 minutes, turn. Microwave again for 1 1/2 minutes, turn and microwave for 1 1/2 more minutes. At this time the grain free baby muffins should be set and pull away front he edges of the dish.|
|If they are still not quite set you can microwave for 30 second intervals until fully cooked, don't overcook and dry out though.|
|I cut these into cubes and use as needed for meals and snack times, sometimes adding peanut butter or apple butter for a nice treat:-)|
Other options for pureed fruit and veggies in these grain free baby muffins DF, GF, are pumpkin, pureed mango, mashed banana, apple/pear sauce, carrots, mixed berries and roasted squash. I have tried them all, and the Cupcake Princess has not refused any of them. This is great when trying new foods and attempting to get different foods into our kids, use a new flavor with a fave, half and half, to help them adjust to new flavors. Also feel free to sub out sunflower butter or almond butter for the peanut butter, it varies according to your, and your little ones, taste and sensitivities, but all work equally well.
The Cupcake Princess hopes your little one appreciates these grain free baby muffins, DF, GF, as much as she does, and even your big kids can get in on the “baby cake” love, I will often put them into silicone muffin cups with extras like chocolate chips or nuts, for a nice and easy nutritious snack for the biggies;-) Enjoy!!!
