Making keto meals for Little Man, and something for all of us too is tricky some days. I don’t want him to be jealous of what we get to eat, that will make him less likely to stay on the diet cooperatively, so we try to have similar dinners. Soups work well for this, and pancakes too, but, for a nice change, with a small hint of trepidation on mommy’s part, we had eggs benedict recently. I am not skilled at poaching eggs, that is my dad’s purview, not mine, but I make a mad white sauce, so combined we managed to turn out a delish dinner!!
Here is the Keto version of the recipe, the normal version is quite simple with a basic white sauce, add a Tbsp of lemon juice and a tbsp of dijon mustard, ham and a GF roll and you are in business!

Suggested accuracy; achieve within 4 calories of recommended calories AND on or slightly above the ratio.
Use the coconut oil and butter as the base for your sauce, whisk in the creme fraiche and half of the cream. Once it is thickened you can add a pinch of garlic powder and a 1/4 tsp of spicy dijon mustard, whisk well. Scramble your egg with your ham, and whip your cream. Put your whip cream over your fruit, we used frozen blueberries today, and you have a complete keto meal.

Yeah Jamie! You must be getting stride hitting-ish if you are making up recipes again. My Mom made gf jelly roll cake yesterday , I managed a gf, vegan, low fat, low sugar visit with my in-laws. Hooray we all get to eat!
I just happened on your page and I’m quite interested in this Ketogenic diet. I saw that you mentioned pancakes and I wonder if you have ever tried this.

Now this is good…. But I found if I added some wholegrain buckwheat (hot cereal) to the mix, and even some sunflower seeds, it adds a whole new textural yummy-ness.
Store bought buckwheat contains zero carbs and only trace amounts of wheat gluten that may have been picked up during processing.
I hope you love these pancakes as much as I do. Oh and I almost forgot…..orange zest is really good in there too. Let your taste buds and imagination carry you.

Our son is on the medical version of the Ketogenic diet, so it may not work for him, but the rest of us enjoy the variations:-)
