I have a love hate relationship with non dairy coffee creamer, I love the flavors, hate the chemistry they stick in the bottle! But, oh, this mexican chocolate coffee creamer,it is sooooo good, feeding my chocolate and coffee craving all at once, but without all of the chemicals in the other kinds! With this I have a love, love relationship, yay for me, and for you!

a rich non dairy coffee creamer, sweet, rich and slightly spicy mexican chocolate coffee creamer, made with coconut milk.

Ingredients

  • 2 cups coconut milk
  • 4 heaped tablespoons cocoa powder(unsweetened)
  • 4 tablespoons maple syrup
  • 1 teaspoon pure vanilla extract
  • 3/4 teaspoons ground cinnamon
  • 1/8 teaspoon cayenne(more if you like it spicy:)

Directions

Step 1
warm your coconut milk gently in a small pan.
Step 2
whisk in your cocoa powder and maple syrup, making sure that the coconut milk is just warm, not hot.
Step 3
whisk in your cinnamon, vanilla and cayenne, whisk well, remove from heat.
Step 4
allow to cool completely, place in a glass jar and keep in the refrigerator.
Step 5
Enjoy with your coffee, this will keep for 7+ days in the fridge.

With coconut milk easy to make, or buy, and the rest of the ingredients sitting in the cupboards, this recipe will only take a few minutes to whip up, and you wil get to enjoy the smooth, rich, slightly spicy non dairy creamer every morning too:-)
