Pinning Paleo…and a paleo “buttery” spread

If you follow me at all on Pinterest then you might suddenly see a number of paleo recipes being Pinned by yours truly.  I am liberally Pinning Paleo currently because I suspect that Cupcake is not enjoying everything that I eat as much as I do, namely dairy:(  Boo Hiss, Boo Hiss, I love dairy, but it appears I may be the only one of us who does.  So, because I love her, and she is so stinking cute, I have given up dairy for the next 24 days(4 days in and counting!)

So since I am Pinning Paleo, I may as well work to create some good paleo, and non paleo but still dairy free,recipes for others to enjoy as well, like this quick and simple paleo  “buttery” spread and some light and tender Paleo chocolate waffles to spread it on(recipe soon to come;)!!

the maple syrup in the recipe is not necessary, but adds a nice touch to the spread in my opinion, that takes away slightly from the coconut-ty flavor, I love coconut, but need to not to have everything taste like it, know what I mean:-)

Paleo “buttery” spread


  • 1/3 cup coconut oil
  • 1/3 cup oil of your choice(almond, olive, sunflower, grape seed)
  • 1 teaspoon sea salt
  • 2 tablespoons maple syrup


Step 1
Gently, over low heat melt the coconut oil, until fully liquid, remove from heat
Step 2
Pour in the salt and whisk until it dissolves.
Step 3
Pour in the liquid oil of your choice, whisk well.
Step 4
Place oils in a metal or glass bowl, and allow to sit and cool.
Step 5
Once the coconut oil begins to cool it will start to solidify. Once the oil begins to have a white rim along the edges of the oils you are almost ready to begin whipping it. Add the maple syrup now.
Step 6
As the oils cool you will see more white congealing, so you can begin to whip it with a mixer. Use an electric mixer to whip the oil mixture until it is fully blended and fluffy white.
Step 7
Carefully spoon all of the Paleo "buttery" blend into a container, and enjoy a dollop or two off of the beaters, mmm mmmm good!!
Step 8
To make this go quicker you can refrigerate the oils, but watch them carefully, if they harden too much without whipping you will need to reheat them all over again. Another option is to place the bowl onto an iced pack to chill it as you use the electric mixer, this is my preferred method:-)

Now to create another dairy free creamer, coffee is not acceptable without it:-)
