So, for the Keeper of the Home Plan it, Don’t Panic weekly menu challenge, I have finished my menu for the week, and started on next weeks even, yippee for me:-)
Thursday, breakfast I am cooking a large batch of 7 grain, gluten free hot cereal, lunch, whatever is handy and yummy/needs to be eaten. For dinner, since we have church and Awana tomorrow night, we will have something simple, cheesy garlic potato pancakes and hot dogs, with veggie sticks and dip.
Friday breakfast of hot cereal or eggs and dinner will be something simple, like pasta and fresh made marinara sauce with a salad.
Saturday breakfast we will have crepes, with leftovers planned for sandwich rollups later on, then we have play practice, then a meeting, so it will be crockpot dinner of sweet and sour sausage, and rice.
Sunday breakfast likely eggs and fruit and I might make a roast with veggies and potatoes in the crockpot, with leftover soup stock for a veggie and tomato soup later next week.
Monday will any leftover hot cereal, and pancakes for breakfast, and dinner will be chicken and rice with peas in the crockpot.
Also this weekend I will be canning a bunch of garden tomatoes, both plain and with basil and oregano, for use this winter, so soups with tomato will likely come up next week, since I always have more stewed tomatoes than jars to put them into, or space in the pot for that matter!
So, I feel better getting it all written down and sorted out in my head, now I should probably print it out for Hubby, he might appreciate that more:-)
Sometime also in this busyness I have to make some sort of granola bars, or cookies for little Miss and I, and something for everyone else, where will that fit I wonder??
