GF pineapple coconut cobbler

GF pineapple coconut cobbler

Cooks in    Serves 6-8
Ingredients
  • 1 can pineapple tidbits
  • 2 tbsp cornstarch
  • 1 c GF flour (I used brown rice flour and almond meal, equally)
  • 1 1/2tsp baking soda
  • 2 tsp stevia
  • 1/2 c shredded coconut
  • 1/4 buttermilk(could use kefir instead)
  • 1 egg, beaten
  • 3 tbsp coconut for the topping
Directions
  • Preheat oven to 400*, grease 8x8 baking pan with coconut oil. In small saucepan pour reserved pineapple juice and start to warm. Into warming pineapple juice add cornstarch, and whisk well. Continue to whisk as the juice thickens, once it is bubbly and thick add in pineapple tidbits, shut off. In medium mixing bowl add flour and baking soda, salt, and Stevia, whisk well. Pour in buttermilk, and well beaten egg, gently mix in coconut, and let sit for 5 minutes. Pour pineapple mix into prepared baking pan, spoon cobbler/biscuit mix over gently. Sprinkle 3 Tbsp coconut over cobbler mix, and bake at 400* for 30 minutes, or until top is browned and bubbly.
  • For variations, I am thinking of adding apricots into the pineapples, for a summery taste, or trying lemon jello to the pineapple juice, in place of cornstarch, for a bit of zing, like a pineapple lemon meringue cobbler. Dried mango and papaya might be fun in the pineapple mix too, and so pretty, summer yummmmm. For my dad I might try orange marmalade, so many possibilities
