Old Fashioned GF doughnuts

Cooks in    Serves 6-8
Ingredients
  • 1 egg, beaten
  • 1 cups milk
  • 1 tbsp cider vinegar
  • 1/8 cup butter, melted
  • 2 1/2 cups rice flour blend
  • 1/4 cup sugar
  • 2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tsp xanthan gum
  • 2 tsp nutmeg
  • 1/3 c sugar(for dusting)
  • 4 tsp ground cinnamon(mix with the sugar in a bowl for dusting)
  • 6 cups of oil for frying
Directions
  • Combine milk and cider vinegar, allow to sit for 5 minutes. Beat egg and blend with melted butter in a large bowl. Mix butter and egg blend with milk, mix well with a wire whisk or fork.
  • Combine dry ingredients in a separate bowl, create well in center of dry mix, pour in wet ingredients. Mix by hand with a large spoon, gently folding to blend well.
  • Let batter rest for about 15 minutes. Mix should be fairly dry, if it sticks to your hands dust with a bit of rice flour blend. Roll dough into balls, golf ball size, and flatten slightly, set aside while the oil heats. Try to not work the dough too much, it will get tough and not fluff well.
  • Fry in 1 to 3 inches of very hot oil (375 degrees F) until brown then turn gently. I use a cast iron skillet for the frying, and can cook 10 doughnut holes at a time, but you may need to adjust the heat after you have cooked a batch, so watch how fast your doughnuts brown. Once they are cooked remove them from the oil, let them drain on papertowels for a minute then roll gently in the cinnamon and sugar mix, serve warm.
